Baking cookies is an activity that I absolutely love doing with my kids. One, it's really quick and two, its fuss-free and simple. So its actually something enjoyable in the kitchen instead of me worrying too much about exact measurements, dropping ingredients and sticky fingers looking for a quick swipe.

Gluten free cooking is usually a bit tricky. It takes quite a few permutations and combinations of flours and methods to make it taste great. Which is why I was so surprised when these cookies came out tasting absolutely wonderful! They literally took 5 minutes to make and my little helpers pretty much did all the mixing. I used my homemade peanut butter for this recipe because it doesn't contain any sugar. Just honey and a pinch of salt. If you are using store bought peanut butter then just make sure to use one which is as natural as possible. Also, for those of you who are wondering where to buy oat flour from, just use regular steel cut oats and blend them. You can see a more detailed version on how to make it from my oat flour recipe.

I made two versions of this cookie - one with brown sugar and the other with honey. They both came out so so well but at the same time different. For the honey version, I had to add a little bit of extra oat flour to make the batter thicker. They spread out more and were really soft and fudge-like. The cookie with brown sugar tasted more like an original delicious cookie but they weren't as fudgey in texture. I would try out both versions if I were you because they were both sooooooo good!

To top things off they don't even contain any butter or oil. Peanut butter replaces the butter & oil in this recipe. A totally optional step is scattering and pressing down some chocolate chips on top of the cookies before baking. But this isn't something that you really need to do if you don't want to. I find that scattering the chips on top after scooping the dough onto the tray results in using less number of chocolate chips than you would if you mix them into the batter earlier.  ½ cup brown sugar or honey for the sugar free option
 2 eggs
 ¼ tsp salt
 ½ tsp baking soda
 1 tsp vanilla extract

 ½ cup ready rolled oats
 ½ cup oat flour + 3 extra heaped tablespoons oat flour is using honey option

Preheat your oven to 180C. Line your baking tray with parchment paper or a silicon mat. Mix your honey/sugar and egg in a bowl with a whisk until well combined.

Add in the peanut butter, vanilla essence, salt and baking soda. Stir till thoroughly mixed together.

Measure out the oats and oat flour in another bowl and pour in the peanut butter mixture. Mix well.

Scoop 1 tablespoon sized dollops onto the baking tray. The mixture is quite wet. Scatter some chocolate chips on top if using. For the brown sugar cookies, press the tops and slightly flatten them. The cookies with honey spread by themselves and don't need any flattening out.

Bake in the oven for 10 to 13 minutes. Keep checking after 10 minutes. If you want more chewy cookies then take them out around the 10 minute mark. They will look underdone and feel super soft to the touch but they will be the perfect level of chewy. If you want crispier cookies then bake them for around 13 minutes. Allow the cookies to cool for around 10 minutes and transfer them to a wire rack to come to room temperature. You can store them in air tight container.
