I always find that the dishes that taste best use the simplest of ingredients. Guacamole is one of those dishes! Other than the avocados, you will definitely have the rest of the ingredients in your fridge or cupboard. I have tried guacamole in many restaurants in different parts of the world and there are a couple of pointers when it comes to making the best guac.
- Avocados - Make sure that they are ripe but not over ripe. The ones that are too ripe don't have the fresh green colour and texture that a perfect guacamole should possess.
- Onions - I love using onions but if you find that using raw onion is too harsh for you then soak it in a bit of water for a few minutes before adding.
- Tomatoes - This is definitely a controversial topic. There are many people who don't like tomatoes in their guac. I am not one of them. Tomatoes bring their own flavour and acidity to the dish. I make sure that the seeds and watery bits are removed. The last thing that you want is a watery guacamole.
- Jalapeños - Typically most guacamoles do not have jalapeños but I love a chilli hit to the otherwise mild mashed avocados. If you don't have jalapeños then you can always use a little bit of any other chilli or even red chilli flakes.
I find that it tastes best when it is allowed to rest in the fridge for 20 minutes before serving. The flavours meld together perfectly and you will have the ultimate party starter for your guests!
