Hope this post finds you all safe and happy in the cozy confines of your own home. I am sure that it can be frustrating at times to be cooped up but just think about it for a second. It is the middle of a pandemic and many of us are comfortable at home with access to food, television, wifi and so many other things. A good time to reflect and count our blessings!

The children are definitely getting a bit cranky so I am trying to keep them busy doing some activity or the other throughout the day. They just love eating chicken nuggets as well as helping me make them. So all in all a great activity for the kids.

I prefer baking instead of frying them since we make it quite often. Another option is to pan fry it with just a teaspoon of oil in a hot pan till brown and crispy on both sides. You can even use an air fryer in case you have one at home. All of these methods turn out really well.

I use homemade breadcrumbs because it is a great way to use up stale bread. Just toast any old bread and blitz it up into crumbs. You can also use store bought or even panic breadcrumbs which also turn out amazing! Mixing the breadcrumbs with just a little bit of parmesan totally makes this dish sensational by creating a crisp golden outer layer.

My kids just love these baked chicken nuggets for dinner. Crunchy coating and soft on the inside, these are the absolute best!

 2 chicken breasts (cut into 1 1/2 inch pieces)
 4 tbsp olive oil or melted butter
 1 cup breadcrumbs
 ½ tsp paprika
 ¼ cup grated parmesan
 1 tsp onion powder (optional)
 salt to taste
 pepper to taste

Preheat your oven to 200ºC. Cover your baking sheet with foil and keep it aside.

In a bowl, toss the chicken pieces with some salt and pepper. Now spoon over your olive oil onto the nuggets and mix it till all the pieces are nicely coated.

Spread the breadcrumbs out onto a plate. Add some paprika, parmesan and onion powder (optional) to the crumbs and give it a quick stir.

Pick up a nugget and place it in the breadcrumbs making sure to coat all sides well.

Shake off the excess and place it on the foiled sheet. Keep repeating these steps till all your chicken nuggets are coated.

Place them in the oven. Once 10 minutes are up, turn your nuggets over and bake for an additional 5 minutes. They are now ready!
