I love using buttermilk while baking and especially while making pancakes. It really adds a tenderness to many a baked treat and keeps them really light and fluffy.
Unfortunately I cannot use actual buttermilk if my husband is to enjoy anything I make so this is the next best alternative. Coconut milk is a very healthy dairy free milk substitute. You can use either fresh homemade or canned coconut milk. I have used canned coconut milk for this post only because I had some extra left from a dinner party that I hosted the previous day. So you will notice that it is slightly thicker in the pictures that fresh coconut milk would be. Both totally work!
A healthy dairy free alternative to buttermilk.

Pour the vinegar/lime juice into the coconut milk. Mix well and allow to sit for five minutes. Your dairy free buttermilk is ready!
