I really do love my avocados. They are just so versatile. Cubed over any protein, a chunky guacamole, spread over toast, the possibilities are endless. Though to be honest the first time that I tasted one, I almost spat the entire thing out. This experience eliminated them from my diet for a while till I had the courage to try some again. I then realised that there are two main ingredients which truly make an avocado sing - Salt and Lime! So always make sure to add them generously.

This grilled salmon with avocado salsa is a phenomenal combination of lightly spiced flakey salmon and cool limey (Is that a word?) avocado. Just give it a try!

Grilled Salmon
 175 g salmon
 ¼ tsp pepper
 ¼ tsp salt
 ½ tsp sweet paprika
 ¼ tsp garlic paste
 1 pinch cumin powder
 ¼ tsp chilli powder
 ¼ tsp onion powder
 1 tsp olive oil
Avocado Salsa
 1 cup avocado (cubed)
 ½ cup tomato (cubed)
 ½ cup onion (cubed)
 1 ½ tbsp coriander leaves
 ½ tsp garlic (minced)
 ½ lime
 ½ tsp salt

Make a rub for the salmon with the onion powder, chilli powder, cumin powder, garlic paste, sweet paprika, salt and pepper. Massage the salmon with the rub and keep aside for 10 min.

Make the avocado salsa by combining avocados, tomato, onion, coriander leaves, garlic, lime and salt. Keep in the fridge while you wait for the salmon to be cooked.

Cook the salmon over a hot grill for 2 minutes skin side down and 3 minutes on the other side. Feel free to use any pan or skillet in case you don't have a grill.

Spoon the cool avocado salsa over the warm lightly spiced salmon and serve immediately.
