I love me a good sugar cookie. I mean who doesn't? It is a universally loved food item by kids and adults. Baking a good sugar cookie is also relatively simple. No rocket science involved. There lay the challenge of coming up with a healthy cookie recipe which rivalled the sugar cookie in terms of texture, taste and ease.
I did try to eliminate butter but it just turned out too hard and chalky. Then I thought to myself that adding just a little bit of butter while making sure it was still low calorie definitely was worth a try.
These turned out amazing. Their texture was even better than a regular sugar cookie because they came out of the oven ultra chewy. Best part about them - just 5 ingredients! Raw honey eliminated the need for any sugar. Try to use the most natural kind that you can find. You won't regret it.
My kids loved them and the husband who is gluten intolerant literally inhaled them! Just about managed to save a couple so that I could take pictures for the blog. This is a great recipe to use for some Christmas cookies. Just cut them out with Christmas themed cookie cutters and be prepared to wow everyone during the festive season!
This is a scrumptious 5 ingredient healthy sugar cookie recipe which is refined sugar and gluten free.
Preheat your oven to 180C. Line a baking sheet with a silicon mat or parchment paper. In a large bowl mix the almond flour, softened butter, honey, vanilla essence and salt together. Let it rest in the refrigerator for half an hour.
Remove from the refrigerator and roll into small bowls. Press them into round shapes with your fingers onto the silicon mat or parchment paper. You can either leave them like this or use a cookie cutter to cut them into shapes. Place them in the oven for 10 minutes.
Remove from the oven and let them cool down slightly.
If you would like to make the coconut sugar glaze then just mix the coconut sugar and milk together with a whisk till the sugar melts. Glaze the cookies with the coconut sugar frosting. Enjoy with a cup of milk or at teatime.
