Vegan cookie recipes usually include vegan butter and I definitely don't have that with me on a regular basis. I love recipes that don't require any fancy ingredients and this is surprisingly one of those. Since we don't use eggs here, not even flax eggs, these cookies are a bit soft as soon as they come out of the oven but totally firm up if left to cool down for around 10 to 15 minutes before consuming.

You will be so surprised at their chewiness. I always recommend underbaking rather than overbaking so don't go over 11 minutes unless they look totally uncooked. I constantly make these even for non vegans who have no idea that they are vegan and eggless. If you don't have chocolate chips then chop a regular semi sweet chocolate bar (make sure it is good quality) and stir it into the cookie dough instead of the chocolate chips.

These are crispy on the outside yet gooey and chewy on the inside. Loaded with melted chocolate chips in every bite, these are the BEST vegan chocolate chip cookies ever!

Absolutely no fancy ingredients required to make these super yummy & chewy vegan chocolate chip cookies!

 ½ cup all purpose flour
 ½ cup oat flour
 ½ tsp baking soda
 1 pinch salt
 ¼ cup regular sugar
 ¼ cup brown sugar
 3 tbsp coconut milk
 2 tbsp coconut oil
 1 tsp vanilla essence
  cup chocolate chips

Preheat your oven to 175 degrees centigrade. Line a baking sheet with parchment paper or a silicon mat and set it aside. In a large bowl mix together the wet ingredients which are coconut milk, oil, brown sugar, white sugar and vanilla extract.

In another bowl, whisk together the all purpose flour, oat flour, baking soda and salt. Add the dry ingredients to the wet mixture and using a wooden spoon or spatula, stir everything together. The batter will be a bit thick. Stir in your chocolate chips. Scoop 1 tablespoon sized cookie dough spoons onto the parchment lined baking sheet and transfer to the middle rack in your oven for 10 to 11 minute.

The cookies will seem soft when they come out but will firm up once they cool a bit. Enjoy warm and fresh out of the oven!
