To be really honest, you give me a peanut dressing on anything and I will go totally ga-ga over it. But this peanut-ginger salad dressing cranks things up to a whole new level. You can literally put it on anything and it will taste delicious. Don't get me wrong, I love kale but it is slightly bitter and you need a strong but gentle dressing to tone down it's earthy taste.
Like most of my recipes which use peanut butter, I used my homemade peanut butter and it makes a world of a difference. Using kale and mixed lettuce leaves as a base, you can choose absolutely any vegetables that you like to add to this salad! Some crunchy cabbage, fresh carrots or some chopped capsicum will all taste great. So use whatever you like as long as it has some crunch to it.
Once you toss the salad, refrigerate it for 5 minutes and allow for the flavours to meld together. Serve chilled!

Combine all the salad dressing ingredients in a bowl and whisk away till well emulsified.
Assemble all the dry ingredients for your salad in a large serving bowl.
Toss the dry ingredients with the salad dressing 5 minutes before you serve it so that the dressing gets soaked into the salad. Serve!
