My grandparents used to live in Manila, Philippines and my mother and aunt spent most of their childhood over there. So that is where my grandmother was introduced and learnt to make this one bowl wonder and she would cook it for us while we were growing up.
Khow Suey is literally one of my most favourite things to eat. We now end up making it at home very often and swap out the noodles for rice to make it gluten free. In case you want to go carb-less then don't add any rice or noodles and just pile on the vegetables, chicken and boiled egg. I also usually make the coconut milk at home because I find it much lighter than canned but if you don't have time then go ahead and use coconut milk from a can. In the recipe, I have specified 4 cups of coconut milk but that is if you are using fresh. If using canned, then use 3 cups of coconut milk mixed in with 1 cup of water.
I think the general misconception is that Khow Suey is a difficult dish to make. On the contrary it is extremely easy to cook. It is just a bit time consuming to assemble and prep all the accompaniments/ toppings. You can even make this when you are having friends over for dinner because it's a real crowd pleaser!
A delicious one bowl meal full of vegetables, noodles and chicken cooked in a coconut milk gravy with a whole lot of accompaniments.

Sweat the onions down till they are soft and translucent.
Then add in the chicken pieces. Sprinkle the salt, pepper, turmeric and cumin powder over the chicken. Mix it well and sauté till it becomes a deep brown colour. This might take a while but be patient because its definitely worth it.
Mix in the garlic and ginger paste along with the whole green chillies. Cook for an additional 5 minutes to remove the harsh bite of raw garlic till it becomes more mellow in flavour.
Pour in the coconut milk. Cover and let it simmer for another 20 minutes. Then turn the heat off and squeeze in the juice of one lime and pour in the soya sauce.
I have just mentioned a few accompaniments that you can eat with Khow Suey. The sky is the limit. It is totally up to you if you want to add or remove any of the condiments. Personally, I like it brimming full of toppings!
