I am a huge fan of Chinese food. I could literally have it every day of the week. So authentic Chinese cooking requires quite a few ingredients which I have collected over time but I am sure that you won't just have them sitting in your cupboards. Items like rice wine vinegar, sweet soy, chilli bean paste to name a few. In order to make it easy, I have made sure that this chilli garlic prawns recipe requires only very few and easy to find ingredients. Don't be fooled though. Just because it only has a few ingredients, you should know that each spoonful is like a flavour bomb going off in your mouth.

If I am making something for my husband and myself for dinner then it definitely has to be quick and easy and this recipe is the perfect example.

When searing the prawns at the beginning of the cook, make sure that they are all in one layer. Do not overcrowd the pan. You want to get that beautiful sear on the prawn because that is how flavour is also built up in the dish. The first time that you cook the prawn, you actually want to remove them from the pan when they are still raw in the middle. They should only finish cooking after you return them to the pan with the sauce. When ready, the prawns should be just cooked and soft.

You can also use any protein for this recipe. Prawns need not necessarily be the main protagonist over here. You can even use chicken, lamb, tofu, paneer or even mushrooms. Whatever you decide to use, this sauce will definitely make sure that this dish hits the spot!

A lip smacking recipe for prawns sautéed in a chilli garlic sauce interspersed with some crunchy green peppers and onions.

 400 g prawns (peeled & deveined)
 1 tbsp cornflour
 2 tbsp oil
 3 garlic cloves (chopped fine)
 2 tsp ginger (minced)
 1 tsp chilli flakes
 ¾ cup onion (quartered)
 ¾ cup green peppers (chopped same size as onions)
 3 tbsp chilli garlic sauce
 2 tbsp brown sugar
 2 ½ tsp soya sauce
 ½ cup water
 1 tsp toasted sesame oil (optional)
 salt
 pepper

Sprinkle some salt, pepper and cornflour over the prawns. Toss till coated evenly. Then set aside for 10 to 15 minutes.

Heat up 1 tablespoon of oil in a pan over high heat. Place the prawns in the pan in an even layer. Cook for one minute. Turn the prawns over and cook for another 30 seconds. Now remove the prawns from the pan.

Put the remaining oil into the pan. Add in the garlic, ginger and chilli flakes. Cook till the garlic turns slightly brown. Now put in the onions and capsicum. Cook for another minute till the vegetables have just started cooking but are still crispy.

Now pour in the chilli garlic sauce, brown sugar, soya sauce and water. Stir till everything is dissolved and let it simmer and cook down for a few minutes.

When the mixture gets thick then add in the prawns to the chilli garlic sauce. Toss the prawns in the sauce and cook down for another 2 or 3 minutes. The prawns should be just cooked through and the sauce should be thick and coat the prawns well. Just before removing from the heat, pour in the toasted sesame oil.

Remove from the heat and garnish with some sesame seeds and spring onions. Serve hot over some cauliflower/regular fried rice.
