A delicious one bowl meal full of vegetables, noodles and chicken cooked in a coconut milk gravy with a whole lot of accompaniments.

Chicken Gravy
 300 g chicken (chopped into medium sized pieces)
 1 onion
 ½ tsp cumin powder
 ½ tsp turmeric powder
 ½ tsp garlic paste
 ½ tsp ginger paste
 2 green chillies (whole)
 4 cups coconut milk
 1 lime
 1 tsp soya sauce
Cooked Noodles or Rice
Additional Items
 boiled eggs (chopped)
 coriander leaves
 fried garlic bits
 fried onions
 peanuts
 fried cooked noodles
 blanched broccoli
 blanched capsicum (cut into strips)
 chopped spring onion

Sweat the onions down till they are soft and translucent.

Then add in the chicken pieces. Sprinkle the salt, pepper, turmeric and cumin powder over the chicken. Mix it well and sauté till it becomes a deep brown colour. This might take a while but be patient because its definitely worth it.

Mix in the garlic and ginger paste along with the whole green chillies. Cook for an additional 5 minutes to remove the harsh bite of raw garlic till it becomes more mellow in flavour.

Pour in the coconut milk. Cover and let it simmer for another 20 minutes. Then turn the heat off and squeeze in the juice of one lime and pour in the soya sauce.

I have just mentioned a few accompaniments that you can eat with Khow Suey. The sky is the limit. It is totally up to you if you want to add or remove any of the condiments. Personally, I like it brimming full of toppings!
