This colourful salad is the perfect vessel for the punchy ginger peanut dressing that goes with it!

Peanut-Ginger Dressing
 1 tbsp soya sauce
 2 ½ tbsp honey
 2 ½ tbsp rice vinegar or any vinegar
 1 tbsp peanut butter
 ½ tbsp ginger paste
 ½ tbsp garlic paste
 1 tbsp Chilli Garlic Sauce ( I used Posh Nosh Chilli Garlic Sauce)
 ¼ tsp salt
Salad
 2 cups mixed lettuce leaves
 1 cup chopped kale
 ½ cup chopped carrot (cut into strips)
 ½ cup edamame
 ½ cup capsicum (cut into strips) (optional)
 ¼ cup roasted salted peanuts (optional)

Combine all the salad dressing ingredients in a bowl and whisk away till well emulsified.

Assemble all the dry ingredients for your salad in a large serving bowl.

Toss the dry ingredients with the salad dressing 5 minutes before you serve it so that the dressing gets soaked into the salad. Serve!
