These healthy no bake granola bars are DA BOMB! Dates are the ultimate natural sweetener and with the help of a little bit of honey, no sugar particles were harmed during the making of this recipe. So basically zero sugar. So basically super healthy. So basic that it has just 6 ingredients in total. I'm all for basic but this basic is just, as I said before, DA BOMB! Not to mention that it has everything going for it - a salty kick from the peanuts, a chewy texture from the dates and a sweet hit from the honey.

In case your dates are already juicy and sticky then you don't even need to soak them as I have mentioned in the recipe. Just blend them straight away. Anyway it is better to keep the liquid quantity as low as possible. The best part is that you can use this granola recipe as a base and add in your favourite flavours like chocolate chip or dried fruits.

Prep Time15 minsTotal Time15 mins

1 ½ cups rolled oats (gluten free)
 1 cup dates
 ¼ cup honey
 ¼ cup peanut butter
 1 cup roasted peanuts
 3 tbsp grated coconut

1

Soak the dates for 5 minutes in a bowl topped with some water.

While the dates are soaking, place the rolled oats and grated coconut in a dry saucepan.

3

Toast the coconut and rolled oats together till they are both light brown in colour.

4

Blend the dates in a mixer till a thick paste is formed. It doesn't have to be smooth. In fact a chunky paste is preferable.

5

In a large bowl, mix the toasted oats, grated coconut, peanuts, date paste, peanut butter and honey till mixed well and the oats are coated all over in the sticky mixture.

6

Pour the mixture into a parchment lined pan. Press it down firmly with the back of a glass bottle so it is packed as tight as possible. Cover with some more parchment paper and refrigerate for at least 4 hours. Then cut into rectangles and devour!
