A delicious, fresh and healthy quinoa salad which makes a perfect light meal or a great side dish.

Salad
 ½ cup quinoa
 ¼ cup pomegranate
 ½ cup shredded lettuce leaves
 2 tbsp chopped apple
 3 tbsp chopped red capsicum
 3 tbsp chopped green capsicum
 3 tbsp chopped yellow capsicum
 2 tbsp chopped onion (soaked in 1 teaspoon lime juice)
 2 tbsp goats cheese
Salad Dressing
 ½ cup yogurt (any kind)
 ½ lime
 1 tbsp coriander leaves
 ¼ tsp paprika powder
 1 tbsp honey (optional)
 1 ½ tbsp olive oil
 1 pinch pepper
 salt to taste

In a bowl, combine the quinoa, pomegranate, half the goats cheese, apple, capsicum, shredded lettuce and onions.

To make the dressing, whisk together the yogurt with lime juice, coriander leaves, paprika, salt and pepper.

Slowly whisk in the olive oil into the yogurt mixture. Mix well till it is totally emulsified and is a smooth dressing.

For the final step, toss the dressing with the salad and garnish with the remaining goats cheese.

      Hi! Yes definitely. You can use any other grain also like amaranth etc. They will all work out well!
