A classic marinara sauce made from fresh tomatoes which is simmered with garlic and herbs to produce the tastiest red sauce and beats store bought pasta sauce any day!

 4 tbsp olive oil
 1 onion (finely chopped)
 4 garlic cloves (sliced)
 1 tsp dried oregano
 ½ tsp red chilli flakes
 5 tbsp red wine (optional)
 8 cups tomatoes (chopped)
 ½ cup water (optional)
 ¾ tsp sugar
 2 tbsp chopped basil
 to taste

Warm up your olive oil in a pan and sauté the onion and garlic till soft. Put in the oregano and chilli flakes and allow it to cook for a minute.

Then pour in your red wine and allow it to reduce.

Add in the chopped tomatoes and let it cook down for around 20 minutes. Keep adding water to make sure that it remains saucy and not too dry. Remove from the heat, allow it to slightly cook and blend with an immersion blender. Place the marinara sauce back on the heat.

You can now sprinkle in your sugar, salt and pepper. Allow it to continue cooking for another 20 mins. Toss the basil leaves in the marinara sauce just before removing from the heat. Your marinara sauce is now ready!
