A tender, moist and delicious apple cake which is topped with a crunchy cinnamon sugar crumb.
Preheat your oven to 180°C. Butter and line an 8 or 9 inch baking dish with parchment paper. Measure out the flour, baking soda, baking powder, castor sugar & brown sugar in a bowl.
Whisk till mixed thoroughly.
In another bowl, add in the eggs, oil, yogurt and vanilla extract. Whisk till just combined.
Pour the liquid mixture into the dry mixture and mix very gently until JUST combined. Be careful not to over-mix.
Combine the apples with the brown sugar and cinnamon.
Gently fold the apple filling through the cake mixture. It doesn't matter if it has a few lumps.
In a small bowl, mix together the sugar, cinnamon & melted butter till a sandy rubble is formed.
Sprinkle the cinnamon sugar mixture onto the apple cake in an even layer. Bake for 30 to 35 minutes or till a skewer inserted in the middle comes out clean.
